Chocolate Chip Cookie For One

I hate following recipes. I hate following instructions period. For food, I just like throwing some ingredients in a bowl and seeing how it turns out.

That’s exactly what I did here. And it turned out to be SO FREAKIN’ AWESOME🤯. This is probably in my top 3 favorite cookie recipes. It’s SO quick. Like it says in the title, it’s only 8 INGREDIENTS! If you count the salt, chocolate chips, and baking soda.

I definitely encourage you to try this. And NO, I’m not just saying that because it’s my recipe. I would still be saying that if it was Suzy Q’s recipe down the street.

It seriously tastes like it’s got 5 cups of sugar in it, even though it only has 2 teaspoons. TEASPOONS! Bloggers these days put like a cup of sugar in a cookie for one. I mean, why? LOLL🙃.

I think a part of why this cookie is so good, is because I added barley flour instead of oat. I always use oat. I think I’ve had a lot of it, so now I’m becoming allergic to it. That’s why I’m trying to take a break🤠.

Awesome Cookie

Equipment

  • 1 pan
  • 1 sheet parchment paper

Ingredients

  • 1/4 cup barley flour
  • 1 Tbsp butter
  • 2 Tbsp milk of your choice
  • 2 tsp coconut sugar
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt
  • a few drops stevia
  • 2 Tbsp chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Mix all ingredients in bowl.
  • Lay parchment paper out on pan.
  • Shape cookie on pan.
  • Place in oven for 10-15 minutes.
  • Once done, let cool for 5-10 minutes.
  • And you're in heaven. Enjoy!
